It's been fascinating. Ya writes the 1st vegan pizza cookbook, and people think you're a one-trick pony, that all you can do is make pizza! Kids, I've been cooking and exploring veg'n food in the kitchen for over thirty years. At last count, I own well over 400 veg'n cookbooks. Why, back when I was your age, we'd have to walk 60 miles in the snow to a local Korean grocery store to get blocks of yellow tofu (stored in a 5 gallon container in water). Note: only the snow and distance is exaggeration.
Anyway, I had four cookbook ideas in mind when I settled on "pizza" (which took me over 5 years to research and get the published 60 cheese-like sauce recipes the way I wanted them). One of the original book concepts, which I came very close to doing (may still) was "vegan sushi." Was thinking about this recently when making a new batch (a play on "Futomaki" for the purists out there), using greens and asparagus from the garden. Here's a photo of before and after. Desu!
Of course, Heart Healthy Pizza Vol. II remains a distinct possibility... there's an abundance of pizza and cheese-like sauce recipes, let alone, other pizzeria goodies I didn't get to include in the 1st book... we'll see!
